What is SPACETIME food?

We started this whole road to SPACETIME with Kitsune Noir back in March of this year. It seems like forever, so, we are glad the day of the release has finally arrived. I say it seems like forever, but, that’s all in my mind. In reality, 6 months to take a concept to prototypes to reality is not long at all.

We all know how the SPACETIME project started. If you don’t, I’ll let Bobby of Kitsune Noir do the talking. So much goes into all this and it helps to feed the mind… Literally. Here are the highlights.

Our initial meet-up, Cole’s Diner in Downtown Los Angeles. A great little spot, known for their reasonably priced corned beef and french dip sandwiches, atomic pickles, apple pie a la mode, and nice selection of draft beers. What you may not know is that Cole’s also has a secret backroom bar called The Varnish. Recently featured on Evan Kleiman’s Good Food, she talked about the mixologist there and how he uses farmers market fresh produce for his cocktails.

Every other week or so, we’d pick other spots around LA. Bobby swore by M Cafe. I was dubious about macrobiotic cuisine. Happily, I was blown away. It must have been the food because this is where the name SPACETIME was born, the overall concept and aesthetic was decided on, the artists were thrown into our universe, and the SPACETIME offerings were set. Tons of ideas were born, a lot got done here.

Brunches at La Mill were a given. Brioche donuts with powdered sugar and vanilla cream dip. Done.
