Cooking with Lisa Congdon: Vegetarian Sushi Bowl Recipe.

As an artist and illustrator, Lisa Congdon has her days packed with activity. The designer behind our new tea towels recently moved into a beautiful light-filled home in Oakland, and got married last Saturday! When she’s not working, Lisa enjoys swimming, cycling, and cooking. In fact, she let on that her favorite room in the house is the dining room.

Today, we ask Lisa to share with us a favorite recipe and why it’s special to her. We love that it’s straightforward, completely achievable on a weeknight and sounds equally yummy to boot!

Lisa Congdon: My partner Clay and I love to make vegetarian sushi bowls! They are special to me because a sushi bowl was the first meal Clay ever made for me back when we first started dating almost 5 years ago. They are also delicious and easy. We use white or brown rice, different seaweeds, carrots, edamame, tofu, nuts, and other veggies, depending on what is in season.

To make a sushi bowl, all you have to do is make sushi rice and then steam any number of your favorite veggies to put on top, along with tofu, shelled edamame, seaweed and nuts. For an extra treat, you can make or buy some spicy almond sauce to pour on top!
